Leftover Day!

The planning, shopping, cooking and setting up for Thanksgiving felt like the ride up a roller coaster. The plunge came when it was time to serve the food -- hoping everyone got some of everything they wanted and that the food was good.

We roasted one turkey, but also did something very different (for us) this year. My husband bought a Butterball electric turkey fryer, and he seasoned and deep-fried a 14-pound turkey in it. It was amazing!

Today we get to watch movies and graze at our own buffet of leftovers. With the concerns of hosting the holiday over, I actually think I enjoy the food more on Leftover Day than at Thanksgiving Dinner itself. Especially deep-fried turkey. Yum.

The 14-pound turkey (which is the maximum size you can fry in the fryer we bought) took just an hour. You have to heat up the oil (we used peanut as recommended), for about 30 minutes first.

It took two gallons of oil, but it's easy to drain for reuse. The turkey came out incredibly moist and tasty, and we're looking forward to using the fryer again for other things.
